His career has taken him from Patagonia to leading international hotel kitchens, including SUSHISAMBA at Waldorf Astoria Lusail, New York Steak House at Marriott Marquis City Center Doha, American Scottish Steak House at Marriott Al Jaddaf Dubai and Fuego Latin American Steak House at JW Marriott Marquis City Center Doha.
Chef Marcelo’s culinary journey began at the age of 17, when he started working in a kitchen washing dishes. From there, he worked his way up through dedication, discipline and a deep love for food. One of his earliest inspirations was his grandfather, who worked as a cook on sailboats and later became the heart of the family kitchen, cooking for everyone every weekend. Those early family moments around the table helped shape Chef Marcelo’s belief that food is not only about flavour, but also about connection.
For Chef Marcelo, Latin American cuisine is defined by bold flavours, great ingredients, tradition, generosity and the spirit of sharing. His cooking philosophy is simple: strong flavours, authenticity and respect for ingredients.
